Easy Dr. Seuss Cake Pops

dr-seuss-cake-popDr. Seuss week is rapidly approaching! I have a super simple sweet treat you can make to celebrate the author’s birthday, and it’s perfect for any class parties that might be going on. These Dr. Seuss Cake Pops look just like the hat that belongs to The Cat in the Hat! And, really, they are SO simple to make!

Besides cake pop containers, cake and frosting (more on that in a moment), you will need:

White cardstock
Hole punch (or eyelet punch)
Precision scissors

1. Cut 3″ circles out of the white cardstock. Punch a hole right in the center.

2. Cut a small “X” shape across the circle.

3. Slide the cake pop stick through the hole in the cardstock until it is flush with the bottom of the cake pop tube. Now you have the “brim” of the hat.

dr-seuss-cake-popsFor the dessert itself you will need 1 box mix of red velvet cake and 1 can of cream cheese frosting. Mini muffins are the perfect size to fit into the cake pops so we’ll be making those with the mix.

Make cake batter following instructions on the box. Fill mini muffin tins 1/2 full with batter and bake following instructions on the box. Be sure not to overcook.

Once muffins are baked and cooled, drop one into a cake pop tube then pipe cream cheese frosting on top. Add another muffin and top with more cream cheese frosting.

Fill all of the cake pops with the red velvet cake muffins and icing. I put all of the cake pops in this inexpensive cardboard cake pop container I found at Joann’s and tied a ribbon around it to dress it up a bit.

Super simple, and perfect for celebrating Dr. Seuss week!
